Stuffed Spareribs

Ingredients:

2 racks spare ribs (about 4 pounds)
2 tbsp oil
2 tsp salt
1/3 cup butter
1/4 cup minced onion
4 cups bread cubes
1 cup chopped apple
1/4 cup celery
1 tsp salt
1/4 tsp pepper
1 tsp thyme
1/2 tsp sage
Glaze:
2 tbsp vinegar
2 tbsp brown sugar
1 tsp dry mustard

Procedure:

Heat oven to 350°F. Brown one side of the ribs in oil in roast pan.Turn one set with browned side up and sprinkle wiht 1 tsp salt. Melt butter in heavy skillet, add onion and cook until golden. Add about half the bread cubes and heat, stirring until cubes are lightly browned. Turn into bowl and add remaining crumbs, celery, 1 tsp salt, pepper, thyme, sage and apple. Spread over seasoned ribs, top with other rack, brown side next to stuffing. Sprinkle with salt, Mix vinegar, brown sugar and dry mustard and pour over ribs. (glaze may doubled)
Bake 1 1/2 hours.
Add water to keep from drying.
