Brunch Casserole

1 pound lean ground beef
1/2 pound ground breakfast sausage
1 onion, chopped
2 tablespoons butter
2 cloves garlic, minced
1 can sliced mushrooms
1 teaspoon salt, or to taste
1/2 teaspoon nutmeg
1 package (10oz) frozen spinach thawed and squeezed dry
3 tablespoons flour
6 eggs, beaten
3/4 cup milk, scalded
1/2 cup shredded cheddar cheese

In a skillet, lightly brown meats and onion in butter; drain excess fat and place meat mixture in a well-greased crockpot. Stir in garlic, mushrooms, salt, nutmeg, spinach, and flour. Beat eggs and milk together; pour over meat mixture. Stir well,; cover and cook on low for 7 to 9 hours, or until firm. Sprinkle with shredded cheese 5 minutes before serving. Serves 6.

More Power To Ya Meatballs

Recipe By: Aunt Bee's Mayberry Cookbook

2 pounds ground beef
1 medium onion -- grated
20 ritz crackers -- crushed
1/4 teaspoon black pepper
1/4 teaspoon garlic salt
1/2 teaspoon dry mustard
2 lg eggs -- beaten
1 1/2 cups bottled barbecue sauce
3/4 cup tomato paste
1 teaspoon liquid smoke
1/3 cup catsup
1/3 cup brown sugar
1/2 cup water or as needed

In a large bowl combine the ground beef, onion, crushed crackers, pepper, garlic salt, dry mustard and eggs. Squish the mixture together by hand until well mixed and form into walnut sized balls. Place them on a flat wire rack in a roasting pan or a large cake pan. Bake the meatballs in a 350F oven for 15 minutes, turn and bake for 15 minutes more. In a saucepan combine the remaining ingredients. Cook over medium low heat for 30 minutes. Add the meatballs and simmer for several hours. This may also be done in a crockpot.

CROCKPOT SWEET SAUERBRATEN

3 lb Rump or chuck pot roast
3 Potatoes, peeled & cubed
3 Carrots, peeled & sliced
2 Onions, sliced
10 1/2 oz Can condensed consomme
1 c Dry red wine
1/2 c Red wine vinegar
1 Dill pickle, chopped
1/4 c Water
1/4 c Flour
6 Ginger snaps, crumbled
Salt and pepper to taste

Put pot roast into crockpot. Arrange vegetables around meat. Add consomme, red wine, vinegar and pickle. Cover and cook on high 6 to 8 hours. Remove meat and vegetables from crockpot. Slice meat. Keep meat and vegetables warm. In saucepan, blend flour and water, stir in juices from crockpot along with ginger snaps, and cook and stir over medium heat until sauce comes to boil and thickens. Season to taste with salt and pepper. Spoon sauce over meat.

Crockpot Pizza

1 and 1/2 lbs. hamburger cooked & drained
16 oz mozzarella cheese shredded
1 pkg pepperoni sliced thinly
1 box rigatoni noodles (COOKED)
1 can cream of mushromm soup (UNDILUTED)
2 cans of muhsrooms (IT DOESN"T SPECIFY TO DRAIN OR NOT)
2 jars or cans pizza sauce

Alternate layers-starting with hamburger, noodles, cheese, soup, mushrooms, sauce, pepperoni. Cook on Low for 4 hours.

Pepper Steak

1 1/2 to 2 lbs. beef round steak
2 tbsp. oil
1/4 c. lite soy sauce
1 c. chopped onion
1 garlic clove, minced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground ginger
1 tsp. sugar
2 large green bell peppers, cut into strips
1/2 c. cold water
1 tbsp. cornstarch
Hot cooked noodles or rice.

1) Cut beef into 3 in. x 1 in. strips; brown in oil in skillet over medium heat. Transfer beef and juices to slow-cooker. Combine next 7 ingredients; pour over beef. Cover and cook on low for 5 - 6 hours until meat is tender.

2) Add green pepper strips; cook on low for 1 hour longer.

3) Combine cold water and cornstarch to make a paste; stir into liquid in slow-cooker. Cook on high until thickened -- approx. 30 min. Serve over hot noodles or rice.

5-7 Servings

Spanish Rice

1-1/2 c raw long grain rice
1/2 c olive oil, butter or margarine
1-1/2 c tomato juice
1-1/2 c water
1 onion, chopped
1 green pepper, chopped
1-1/2 tsp salt
1 lb hamburger or sausage, fried and drained

Saute raw rice in oil until golden brown. Place in crockpot with all remaining ingredients. Stir well. Cover and cook on low for 4 to 6 hours (high 2-3 hours). Serve.

Chow Mein

1 1/2 pound cubed round steak
4 pieces celery
4 oz can mushrooms
2 onions chopped
1 c hot water with 3 bouillon cubes
3 T soy sauce
2 t worcestershire sauce
1 pound can chinese veggies
2 T cornstarch mixed with 2 T water

Cook 8-10 hours, add chinese vegetables and cornstarch mix in the last hour

Italian Beef

Take any beef roast-rub a pkg of Good Seasons dry Italian Dressing dressing on all sides. Place in the crock. Dump a deli sized jar of pepperoncinis with juice, on top of roast. Cook on low 6-8 hours. Remove meat and shred. Serve on hard crusted rolls

Beef Stroganoff

stew meat, cut into bite sized pieces
1 can Golden Mushroom soup
1 can French Onion Soup
1 can Cream of Mushroom soup
1 can, mushrooms, drained

Place desired amount of stew meat(cut into bite sized pieces) 1 can Golden Mushroom Soup,1 can French Onion Soup, 1 can Cream of Chicken Soup, And 1 can of drained mushrooms in the crock. Cook on low 6-8 hours. Serve over rice or noodles.

Beef and Noodles

4 lbs stew beef
1 cup flour
salt, pepper, garlic salt to taste
2-3 cans mushrooms
1-2 cups beef broth
Worcestershire sauce to taste
Au Jus powder
hot noodles

Take stew meat and dredge in flour seasoned with garlic salt, fresh ground pepper, and salt. Place in crock. Add mushrooms undrained, add beef broth, and worstchesire sauce to taste. Then sprinkle generously with Au Jus powder. Let cook for 8-10 hours on low. Serve this with hot buttered egg noodles. If you want an easy quick stroganoff add sour cream.

Corned Beef and Potatoes

Layer the bottom of crock with baby carrots. Then add 3 cans New Potatoes 1 drained. Place the brisket on top, fat cap towards the lid of crock. Cook on low 8-10 hours. Note:if using raw potatoes, slice them about 1/4"thick. Turnip and sweet potato may also be added. If adding cabbage, add last 3 hours of cooking time

Teriyaki Steak

2 1/2 lbs boneless steak
1/4 cup soy sauce
1-20 oz can pineapple chunks, drained(reserve 1/4 cup juice)
1 tsp finely grated gingerroot
1 tbsp sugar
2 tbsp vegetable oil
2 cloves garlic, crushed
3 tbsp cornstarch
3 tbsp water
Hot cooked rice

Cut meat into 1/8" slices and place in crockpot. In a small bowl, combine soy sauce, reserved pineapple juice, gingerroot, sugar, oil, and garlic. Pour sauce over meat. Cover and cook on Low 6-7 hours. Turn to High. Stir in pineapple. Combine cornstarch and water in small bowl, add to crockpot. Cook, stirring, until slightly thickened. Serve over rice.

Chinese Pepper Steak

1 12 lbs boneless round steak
1 clove minced garlic
1/2 tsp salt
1/4 tsp pepper
1/4 cup soy sauce
1 tbsp hoisin sauce
1 tsp sugar
1 chopped tomato
2 red or green peppers, cut into strips
3 tbsp cornstarch
3 tbsp water
1 cup fresh bean sprouts
4 green onions, finely chopped
Hot cooked rice

Trim fat from steak. Slice meat into strips. Combine steak, garlic, salt, pepper, soy sauce, hoisin sauce and sugar in crockpot. Cover and cook on Low about 4 hours. Turn to High. Add tomatoes and peppers. Dissolve cornstarch in water in small bowl. Stir into steak mixture. Cover and cook on High15-20 minutes or until thickened. Stir in bean sprouts. Sprinkle with onions and serve over rice.

Spicy Brisket and Noodles

2 1/2 lbs beef brisket
1/2 tsp salt
1/4 tsp pepper
1 sliced onion
1 stalk chopped celery
1 cup picante sauce
1-12 oz can beer
2 tbsp cornstarch
3 tbsp water
Hot cooked noodles

Trim fat from brisket. Combine beef, salt, pepper, onion, celery, picante sauce, and beer in slow cooker. Cover and cook on Low 7-9 hours or until meat is tender. Remove meat and vegetables from cooker. Skim off any fat. Dissolve cornstarch in water. Gradually add to liquid in cooker, stirring constantly. Cover and cook on High, stirring every 10 minutes, about 20 minutes, or until thickened. Cut meat on the diagonal into slices, arrange on noodles. Top with thickened sauce.

Beef Stew

3 carrots, cut up
3 potatoes, cut up
2 lbs beef chuck or stew meat, cut into 1??ot; pieces
1 cup water or beef stock
1 tsp Worcestershire sauce
1 clove garlic
1 bay leaf
1 tbsp salt
1/2 tsp pepper
1 tsp paprika
3 onions, quartered
1 stalk celery with tops, cut up

Put all ingredients in the crockpot in order given. Stir just enough to mix spices. Cover and cook on Low for 10 to 12 hours, or High for 5 to 6 hours.

Meatballs and Pasta

1-28 oz can tomato puree
1-25 oz can tomato sauce
1-8 oz can sliced mushrooms, drained
1 medium chopped onion
2 cloves minced garlic
1/2 tsp oregano
1/4 tsp basil
1 tsp salt
1 lb ground beef
1/4 cup bread crumbs
1 egg
1/2 lb pasta

Combine tomato puree, toamto sauce, mushrooms, onion, garlic, oregano, basil and salt, mix well. Put in crockpot. Combine beef, bread crumbs, and egg. Shape into meatballs. Gently place in crockpoton top of sauce. Cover and cook on Low 5-8 hours. Add pasta on top of cooked meatballs. Cover again and heat on High for 1 hour. Stir and serve.

Meat Loaf and Potatoes

2 medium potatoes, cut into 1" cubes
2 lb ground beef
1 large chopped onion
1 1 /2 cups ketchup
3/4 cup bread crumbs
2 eggs
2 tsp salt
1/3 cup firmly packed brown sugar
1/2 tsp prepared mustard

Put potato cubes in bottom of crockpot. Combine beef, onion, half the ketchup, bread crumbs, egg and salt, mix well. Form into loaf. Place on top of potatoes. Combine brown sugar and rest of ketchup, mix well. Spread over top of meatloaf. Cover and cook on Low for 6-8 hours. Drain liquid and serve.

Chili

1 lb cooked ground beef
1 small chopped onion, sauteed
1 tsp salt
2 tsp chili powder
1 tsp Woecestershire sauce
1-8 oz can kidney beans, drained
1-16 oz can tomato sauce

Combine all ingredients in crockpot. Cover and cook on Low for 6-8 hours or High for 2-3 hours.

Black Forest Pot Roast

3 1/2 lb boneless chuck or round roast
1 chopped onion
1/4 cup water
4 dried shitake mushrooms, crumbled and rinsed
1/4 cup ketchup
1/4 cup red wine
2 tbsp Dijon mustard
1 tbsp Worcestershire Sauce
1/2 tsp salt
1/8 tsp pepper
1 clove garlic, crushed
2 tbsp cornstarch
3 tbsp water

Trim all fat from meat. Place in crockpot. In a small bowl, combine onion, water, mushrooms, ketchup, wine, nustard, Worcestershire Sauce, salt, pepper and garlic. Pour mixture over roast. Cover and cook on Low about 8 hours. Remove meat and slice. Keep meat warm. Turn to High. Dissolve cornstarch in water, stir int crockpot. Cover and cook on High 15-20 minutes or until thickened. Serve sauce with meat.

Smothered Steak

1 1/2 pounds Chuck steak -- strips
1 teaspoon Salt
1/4 teaspoon Pepper
1 large onion -- sliced
3 tablespoons Soy sauce
4 ounces Mushrooms -- drained
1 Can tomatoes -- (16 ounces)

Put meat, flour, salt and pepper in crockpot and stir well to cook steak. Add remaining ingredients. Cover and cook on low for 8 hours, or high for four hours. Serve on noodles or potatoes.Serves 4.
